I enjoy cooking. By the grace of God my family is Italian and so I usually prepare Italian cuisine. I love cooking with wine. Did you know that you can even put wine in the food?
I have never been much of a baker. I have baked some bread but generally I don’t have the patience and precision it takes to be a good baker.
The one except are oatmeal cookies. I have been baking oatmeal cookies for a few years. Our friend Danny that use to work with us died a couple of years ago. Danny was a huge fan of my oatmeal cookies. Whenever Christmas or his birthday was coming up, Danny would lean into me and quietly say, “A couple dozen of your oatmeal cookies would make a great gift.”
Danny believed my oatmeal cookies were world class and in fact he would proclaim them to be the best cookies he had ever eaten.
There is nothing special about my recipe. It is actually the same recipe that is printed on the lid of every Quakers Oatmeal box. Of course I do use real butter and organic sugar. I also add a cup of walnuts. Instead of raisins I have take Alton Brown’s (of the Food Channel) advice that: any recipe that calls for raisins will be improved by using M&M’s instead. As fortune would have it about the time I heard Alton Brown’s suggestion the M&M Company came out with Dark Chocolate M&M’s. Hooray!
I am on a diet and have lost 5 pounds….okay 4 pounds… so I shouldn’t be baking cookies. However, my granddaughter Bailie is leaving for college and our next door neighbor Sheila had a knee replacement.
I baked up a double batch on Sunday and gift wrapped cookies for both Sheila and Bailie. I put a card in Sheila’s gift bag wishing her a quick recovery. In Bailie’s bag I put a note telling her, “If you get tired or homesick just take one or two of these and you’ll feel better.”
I saw Sheila this morning and she said, “those are best cookies!” I hope the cookies work as well for Bailie.
